As the festivities begin with all the vigor and enthusiasm in our household, winter is slowly and stealthily creeping in our lives too and I am desperately trying to absorb every little bit of sunshine left, before it is gone! I love the warm sunshine in winters. It is so full of warmth and positivity. Even though I have moved down south considerably compared to where I first landed when I came to the US, I still find it cold enough. But, I love the festivities and the positivity that comes along with it.
Winters back in my childhood were so much fun. They surely didn’t seem fun then but they absolutely do now. Why do we sometimes take the mundane things so lightly? Eating oranges while sitting out in the sun and then squeezing the peels into each others’ eyes. It sounds quite mean now but it was such a harmless fun and we used to tell each other that the reason we are doing it is because it improves the eyesight. 🙂 Joining two chairs and sleeping on it, covered with a shawl, in the lawn/yard (in afternoons) and then moving the chairs as the sun moved along, all through the afternoon is something I will only be able to tell my kids as part of my childhood stories. In the nights, sitting outside by the fire and eating hot ‘bajre ki roti’ with ‘rajasthani kadhi’ and ‘spicy mirchi ke tipore’……Aah I miss my childhood!!
Waldorf salad is another great recipe for Navratri. The mayonnaise in it can be substituted with thick yogurt quite easily without affecting its taste. Not being a fan of fruit salads, this salad definitely changed the way I look at fruit salads now. Crunchy apples and juicy grapes on a bed of crisp lettuce are balanced in their sweetness with little bit of not-too-sour mayonnaise and nutty walnuts. It is a superb recipe and must be tried right now because the next time we will talk of salads, will be after the New year!!
Ingredients
- 16 grapes
- 1 apple
- 1 1/2 stick (1/2 cup) celery
- 1 tbsp. lime juice
- 1/4 tsp salt
- 1/2 cup roasted walnuts
- 5-6 lettuce leaves
- 2 tbsp. mayonnaise or thick yogurt or sour cream
- chives to garnish
- black pepper to taste
Instructions
- Cut the grapes into halves and apples into bite size pieces.
- Pour the lime juice on the fruits.
- Cut the celery into 1/2 inch pieces and mix with the fruits.
- Add salt and black pepper to mayonnaise (or yogurt or sour cream) and mix well.
- Add it to the fruits and toss it well so that it coats the fruits evenly.
- Arrange the lettuce leaves in the salad bowl first and then add the fruits on top of it.
- Sprinkle the roasted walnuts and garnish with chives. Serve it immediately.
