When my mom first told me about this Santre Ki Kheer, I had my doubts. She went on and on about how awesome it turned out to be and I kept thinking “Since when do you add citrus things in milk and call it Kheer?” But when she raves about something, I know I have to try it. And I have to say, I was blown away by its unique and bold flavors. Every bite is a blend of contrasting flavors. The sweetness and creaminess of the milk is cut by the tang and sharpness of oranges. Do give it a try. I am sure you will love it too.
Here is the recipe-
Ingredients
5 cups milk
1 cup peeled,deseeded and skinned segments of a ripe orange (I used mandarin)
3/4 cup orange juice (I used navel orange)
orange zest of 2 oranges(I used navel orange)
1 tbsp. semolina
3 tbsp. sugar
1/3 cup sweetened condensed milk
A pinch of cardamom powder
Few strands of saffron
pistachios, cashews and blanched almonds
