There are some foods that get the honor of being the face of a city or a state, the culinary pride of that place. Dal Bati is that food for the state of Rajasthan. Rajasthani food is not for the faint hearted. But Dal Bati can scare away the most mighty ones too. But do not let that stop you from experiencing the magic of delicious Dal and Bati. It will be totally worth it.

ingredients
For Panchmel Dal (7-8 people)
1/4 cup Chana Dal
1/4 cup yellow Moong Dal
1/4 cup Toor Dal
1/8 cup green Moong Dal
1/8 cup Black Urad Dal
5 tbsp Ghee
1/4 tsp Asafoetida
2 tsp Cumin seeds
1 chopped green chili
7-8 minced garlic cloves
3/4 of large onion, finely chopped
1/2 tsp Turmeric powder
1 1/2 tsp red Chili powder
3/4 tsp Garam masala
4 tsp Salt
3 cups Water
Juice of 3/4th Lemon
1/2 cup chopped Cilantro
Tadka for Dal
3-4 tbsp Ghee
4-5 chopped Garlic cloves
21/2 tsp red Chili powder
1/4 tsp Garam masala
For Bati (14)
1 cup whole Wheat
2 and 3/4 cup regular whole Wheat flour
3/4 tsp Salt
6-7 tbsp Ghee
little less than 1 cup Water
