I have had my fair share of Paneer Makhanis in the restaurants of America. And have to say, in all humility, that Paneer Makhani is the most abused dish in the entire Indian cuisine.
So then how would I make a good Paneer Makhani? I’ll take fresh, home-made Paneer cubes and add them to a beautifully spiced onion-tomato gravy that has been simmering in the goodness of butter and cream. It’s that easy!!
Here is the recipe-
Ingredients
12 gm Cashews
9 gm Garlic
7 gm Ginger
60 gm Onion
375 gm Tomatoes
6 tbsp 85 gms Butter
1 Bay Leaf
1/2 Mace
1/2 Star Anise
1/4 inch Cinnamon
5 small black Peppercorns
1 Clove
3/4 tsp Salt
1 and 1/2 tsp Red Chili Powder
3 tsp Coriander Powder
1/4 tsp roasted Cumin Powder
2 tbsp Kasoori Methi
1/3 cup heavy Cream
1/4 cup Water
235 gms Paneer cubes
Cilantro and Kasoori Methi to Garnish
