I hardly ever order Palak Paneer in a restaurant. Why? Because a bad Palak Paneer is almost inedible. There aren’t enough good things that I can say about this recipe. Up until now, I used to prepare other Paneer recipes for special occasions. Almost all of them are labor extensive, to say the least. This Palak Paneer is much easier to make and in my humble opinion, tastes hundred times better than each one of them. It has a creamy texture of a well-cooked Spinach, melt-in-mouth home-made Paneer, crunch of Onions and the tadka of ghee. Heavenly! This one is a keeper, without a doubt.
Ingredients
420 gms Organic Baby Spinach (Stems removed, cleaned but not yet washed)
13 gms Garlic, peeled
1/4 cup Oil
1 tsp Cumin seeds
1/2 Black Cardamom
1/2 big Bay leaf
1 and 1/2 cup Onion, coarsely chopped
1 and 3/4 tsp Salt
1 and 1/2 tsp Coriander powder
2 tsp red Chili Powder
1/4 tsp Garam masala
1/4 cup Heavy Cream
1/4 tsp roasted Cumin Powder
300 gms soft Paneer
For Tadka
1/8 cup Ghee (or more as desired)
1 tsp Cumin seeds
2-3 Whole Red Chilies
