My brother and I are just two-year apart. As a kid, while I was going through my phase of “I want to be xyz when I grow up”, he was going through his own motions, at the same time. His longest wishful career phase was ‘Joining the Army’. It went on and on and on. (At least, it seemed like that to me) I remember having a few sleepless nights thinking about him going at the border or worst, into a war. It used to scare me. Which is why I have so much respect for all the soldiers and their families who serve the country in unimaginable ways. It takes a lot of courage to decide to enlist but it takes much more to let your loved one choose that path in life.
And so I love it when they are appreciated and honored for their sacrifice where ever they go. From a simple thing like cheering for them and their families when ever they are among us to bigger things like easier home loans, they are celebrated everywhere. Last week, on memorial day weekend, we went to this zoo in Troutman called Zootastic park. I was pleased to see that it was free for all veterans, that weekend. Such a simple gesture, yet not everyone does it. Come to think of it, it doesn’t take much to show our appreciation to anyone. Few kind words is all it takes and yet we like to keep them locked up inside a safe, in case they slip away. It has made me realize that I do need to let mine out more often.
While I work on that, I am letting out this awesome Oriental Cucumber Salad recipe. It was so awesome and refreshing that we finished 10-12 cucumbers in one-go. Even though this salad does leave out little water because of the dressing and cucumber being cucumber, it doesn’t diminish its taste one bit. It is the perfect summer salad, in my opinion……..for days when the heat in the kitchen is too hot to handle and you wanna get out………literally. 🙂
Ingredients
- 5 English Cucumbers
- 3 tbsp. chopped Chives (optional)
- 2 tbsp. Rice Vinegar
- 1/2 tbsp. Soy Sauce
- 1/2 tsp Sesame oil
- 3/4 tbsp. Honey
- 1 tsp grated ginger
- 1 big clove of Garlic, grated
- pinch of black pepper
- 1 tbsp. plus 1 tsp toasted Sesame seeds
Instructions
- Cut the cucumbers into slices, spirals or whatever shape that works for you.
- Put them on a muslin cloth for 30 minutes to drain some of the water. This step is optional. Gently squeeze out excess water and put them in a bowl.
- Add garlic, ginger, chives to it.
- In a bowl, mix vinegar, soy sauce, oil, honey and black pepper. Mix well.
- Before serving, pour the dressing on the cucumber and sprinkle some sesame seeds in it. Enjoy immediately.
