I love Instant Pickles. They come together very quickly, can be eaten from day one, and are extremely low maintenance. No stirring them for days and days, no keeping them covered in the sun, no drenching them all the way up with oil. Not to mention they are a boon for people who do not have a pickling thumb. This Nimbu ki chutney is a bomb….and I mean BOMB. You will find excuses to eat it.

Ingredients
120 gms Lemons, cut into pieces
40 gms Sugar
4 gms Kalonji
5 gms Sauf
7 gms Methi dana
10 gms Salt
5 gms red chili powder, hot
3 gms Turmeric powder
Pinch of Heeng
