There are about 66,700 versions of Gatte ki sabji in cyber space as I type this, but just a handful of them can boast to be anywhere close to the real, authentic masterpiece that this curry is supposed to be.If I say this methi Gatte ki sabji is exactly like what you would eat after driving a long distance to reach one of the most famous and crowded dhaba in Rajasthan, it might sound a teeny-tiny bit arrogant of me. So I won’t. But let me just say that you won’t be disappointed. The Gattas are melt-in-the-mouth-soft and curry is finger licking good. All you have to do is be strong and don’t cut back on the oil in the recipe!!!
Here is the recipe-
Ingredients
For Methi Gattas
2 cups Gram flour
1 1/2 tsp Salt
3/4 tsp Ajwain or Carom seeds
1/3 tsp Garam masala powder
2 tsp coarse Coriander powder
1 1/2 tbsp. crushed Kasoori Methi (dry Fenugreek leaves)
3/4 tsp Red Chili powder
6 tbsp. Oil
4 and 1/2 to 5 tbsp. thick (home-made and sour is better) Yogurt
2 tbsp Water
5 cups Water to boil the gattas
1/4 cup Oil to shallow fry the gattas
For the Gravy
1 big Onion
8 gm Garlic
8 gm Ginger
Some Water to puree
6 tbsp. Oil
1 tsp Cumin seeds
2 small Bay leaves
1/2 Star Anise
1/2 Mace
1/2 inch Cinnamon stick
1/2 black Cardamom
4 round Red Chilies
1 and 1/4 hot Red Chili powder
1/4 tsp Turmeric powder
3 tsp Coriander powder
1 tsp Salt
4 tbsp. Yogurt
Water (left from boiling Gattas)
To Garnish
2 tbsp. Ghee
1 tsp Red Chili powder
