I sometimes have a hard time understanding people who eat meat and think the vegetarians are missing out on something epic. I hope you noticed the word ‘and’ in there that clarifies that I am not waging a war against all non-vegetarians out there, just a few chosen ones. Coz just to be clear, most vegetarians do not spend their days obsessing about Chicken or Bacon or whatever it is that is considered to be the ‘only delicious food’ in the world by them. Far from it. Most people (at least the ones that I know of) don’t eat any vegetarian food that remotely looks like meat.
Every other day I hear things like “Jack fruit is vegetarian’s meat. You should really try it sometimes.” Gee, Thanks! Now I can’t wait to eat it. In fact, I am totally looking forward to it. Because I spent my entire life looking for something that tastes exactly like meat. And now I have found it, Thanks to them! Or “Try these Soya Nuggets. They are vegetarian’s chicken.” Ugggg…..really? Now I would absolutely not picture Chicken while I eat them. If I was never tempted to eat chicken itself, what makes them think a fake substitute would push me over the edge? As difficult as it may be for them to believe this but no one is twisting my arm to stay vegetarian. It is my own choice!!!
Even though these matar bhari aloo tikkis are 100% vegetarian, I am not claiming them to be a substitute of anything non vegetarian. These are what these are! Incredibly light, fluffy and super crispy Aloo tikkis stuffed with a spicy peas-mix and fried to golden perfection. And who ate the most tikkis? Well, that’s hardly anyone’s guess but they were absolutely worth being predictable. I swear!!
Ingredients
- 1 cup frozen Peas
- 3/4 tsp grated Ginger
- 1 1/2 tbsp. Oil
- 1/4 tsp Turmeric powder
- 3/4 tsp Red Chili powder
- 1/4 tsp garam masala
- 1/4 tsp roasted Cumin powder
- 3/4 tsp dry Mango powder
- 3/4 tsp Salt
- 6 medium Potatoes
- 1 1/2 tsp Salt
- 1 cup Panko bread crumbs
- 4 tbsp. Cornstarch
- 4 tbsp. Water
- 1 cup Panko bread Crumbs
- Oil to fry
Instructions
- In a pan, add oil and let it heat up. Add ginger to it and let it sizzle for few seconds. Then add peas.
- Add the spices and cook until peas lose their raw flavor and moisture.
- Mash the mix roughly and let it cool.
- Divide the mix into 9 balls.
- Boil the potatoes and wash them with cold water to drain off the starch. Peel them and mash them with grater or potato ricer.
- Add salt and panko crumbs to it and mix well.
- Divide the mixture into 9 parts.
- Flatten each part into the palm of your hand and then put the pea stuffing on it. Enclose the stuffing with potato mixture and make a smooth ball. Flatten it again to make discs. Keep aside.
- Heat oil on medium heat until its nicely hot.
- Mix corn starch and water well and dip each tikki in it and coat with panko brad crumbs. Keep aside.
- Fry all the tikkis until crispy golden brown. Enjoy with coriander and date chutney.
Notes
Panko bread crumbs make the tikkis extra crispy. If you are using regular bread crumbs, make sure they are not fresh.
Potato ricer makes the tikkis fluffy from inside but box grater can be used as well.
