Even though I believe one should live in the present and plan for the future, and that past should be looked back as a ‘lesson learnt’ experience, I still sometimes find myself falling into the ‘what-if’ trap. This republic day made me ponder what if I was born before independence? (I know it was not independence day but thoughts are like wild horses. Who can control them?) Would I have been a brave patriot or a coward sucking up to the British? It is easy to say “Oh, most definitely the former!” but then who knows the answers to what-ifs.
It takes real strength just to watch the fake torture shown in the patriotic movies let alone actually bearing it in life. I may not know the answer to most of the what-ifs but I do know the answer to one very popular what-if. What if Shakespeare asked me “What’s in a name?”

Out of the 26 alphabets, 18 of them are right here!!!! yeah….I know what are you thinking. “So close…….Nidhi! So close!Next time, you should think of a recipe that will cover all 26 of them”!! But as complicated and long as the name sounds, the dish itself is very simple yet flavorful. I saw this Lemon, Garlic and Bread crumbs Spaghettini Aglio e Olio first time in Nigella Lawson cookbook and it called out to me. It was a definite hit from the first time around. Since then, I have made it quite a few times.
Spaghettini Aglio e Olio, in a nutshell, is a sauce less pasta cooked primarily with garlic in olive oil. I love saucy pastas but this one is an exception. It has so much flavor in it that it is easy not to miss the sauce in there. Crunchy bread crumbs give this pasta a beautiful, unique and delicious twist.
Ingredients
- 200 gms Angel hair Pasta or Spaghettini
- 1 tsp Salt
- 2 tbsp Olive Oil
- 2 tbsp Butter
- 1/2 green Chili, chopped
- 1 tbsp minced Garlic
- zest of 1 Lemon
- 3 tbsp Lemon juice
- 2 tsp Chili flakes
- 1 3/4 tsp Salt
- 1 tbsp Oil for roasting bread crumbs
- 1/2 fresh Bread Crumbs
- 1/2 cup water saved from boiling pasta
- Parmesan cheese to sprinkle
Instructions
- In a pan, add 1 tbsp oil and bread crumbs. Roast them until they are crisp and crunchy. Keep aside.
- In a wok, heat oil and butter and add garlic and green chilies to it. When they sizzle, add lemon zest to it.
- Next, add chilli flakes and bread crumbs. Save some chili flakes and bread crumbs for garnish. Keep aside.
- In a large pot, boil water and 1 tsp salt. Add pasta and boil as per package instructions. Leaving 1/2 cup water and pasta in pot itself, drain rest of the water out.
- Add salt and lemon juice to the pasta while it is hot and stir well. Quickly add the oil and bread crumbs mixture. Mix again.
- Dish it out. Sprinkle some grated cheese, bread crumbs and chili flakes on top. Serve it hot.
