This Kaju Khoya Matar curry is everything a curry should be and more. This is not your everyday-eating curry though. It is a curry for very special occasions and it tastes like a million bucks too. Your guests will not just lick their plates and bowls clean but will also lick your fingers.
Here is the recipe-
25 gms Cashews
265 gms or 3 medium Tomatoes
2 Tbsp. Oil
2 Tbsp. Ghee
75 gms whole Cashews
1 Bay leaf
1/2 Mace
2 Cloves
1/4 inch Cinnamon
1/4 Star Anise
1 small black Cardamom, crushed
1/2 tsp Turmeric powder
1 and 3/4 tsp Red Chili powder
4 tsp Coriander Powder
1 and 3/4 tsp Salt
1/2 tsp roasted Cumin powder
125 gms Khoya, grated
350 gms Peas
4 Tbsp. heavy Cream
1/2 cup Water
1/4 tsp Garam Masala
Cilantro, grated Khoya and pinch of Garam Masala to garnish
