Gulab Jamun Ki Sabji

A decade ago, it used to be on every Jodhpuri wedding’s menu card, but with the advent of destination weddings, international cuisines and ” let’s do something different” culture, gulab jamun ki sabji is a rare sight these days. So what exactly is it? In a nutshell, gulab jamun ki sabji is a premium version of malai kofta.The soft, melt in ur mouth unsweetened khoya gulab jamuns in a super rich cashew, yogurt gravy makes it an easy choice to be a favorite of many.

Traditionally, no tomatoes are used in this gravy and I have chosen to prepare it that way. Also, most gulab jamun curries will have at least an inch of ghee floating on the top. I have added quite a bit but it is still not enough to please a ‘Pakka Jodhpuri’. But I promise you it’s every bit as delicious!

Recipe-

1/2 cup cashews

1/2 Onion or 170 gms Onion, chopped

6 tbsp Ghee

1 Bay Leaf

1/4 inch Cinnamon Stick

13 gms crushed Garlic

1/2 Black Cardamom, crushed

3/4 tsp turmeric powder

2 tsp chili powder

3 tsp coriander powder

1 3/4 tsp salt

35 gms soft Mawa

1 tsp fennel powder

1 cup full fat beaten Yogurt

1 and 1/2 cup Water

20 unsweetened gulab jamuns
