There are two kinds of people in this world. One, who take a below-average dish and eat it as if it’s the most delicious thing they’ve eaten since the beginning of TIME. And then there are those, who take an epic dish and eat it like they have just tasted sour grapes. Fortunately and unfortunately, I have seen both kinds, in action and let me tell you this, it’s no fun watching the latter. They make everyone sitting with them, lose their appetite too.
Now, I know that we must eat to live but no one said that it had to be a memorable experience, till you live, for all the wrong reasons. Thankfully, most people who I had the pleasure of dining with, fell in the former category. May be because ‘like’ attracts ‘like’. 🙂 or I have been just plain lucky! And if you want your friends to consider themselves lucky too, here is my guide to dining 101. (Just for laughs!)
- Get your hostess a gift. There is no better way to ensure she hasn’t added extra chilies to your food.
- Praise your hostess on her appearance even though she may have flour in her hair.
- Don’t enter the house and faint from all the food smell. Be strong and in no time, you will feel like one of the foods too.
- Praise her Idlis, even if they are no less than stones and Matar-Paneer even if you need a new set of dentures to chew the paneer.
- Don’t, and I mean it, ever leave food on your plate.
- And the last one is for men only. Never say “Wish my wife could cook like you!!” if you still want a home to go back to.
Whenever I want a breakfast that’s low on calories and high on nutrition, I resort to this Fruit n Nut quick Bread. With zero oil, zero sugar and next-to-none flour, this quick bread is a power house of nutrition. This fabulous blog inspired me to come up with my own healthier and sugar-free version of this bread. A slice a day, will keep the doctor away, for sure!
Ingredients
- 2 cups black currants/raisins/sultanas
- 1/2 cup cranberries
- 1/2 cup dates, pitted
- 2 cups walnuts
- 1 cup mixed nuts (almonds, pecans, pistachios and cashews)
- 1/8 cup chia seeds
- 4 oz. applesauce
- 3/4 cup all purpose flour
- 1/3 tsp baking soda
- 1/4 tsp baking powder
- 2 tsp vanilla extract
- 3 large eggs
Instructions
- Preheat the oven to 300F.
- Chop all the nuts and dried fruits. Add chia seeds to it.
- In a separate bowl mix together flour, baking soda and baking powder.
- Add all the nuts and fruits to it and coat them well with flour. Make sure the dates are not sticking to each other in one huge lump.
- In another bowl, beat the eggs until foamy.
- Add applesauce and vanilla extract to mix well.
- Add the nuts to the liquid and mix well.
- Pour the batter to a 9-inch greased loaf pan and bake for about 60-65 min.
Notes
You can use nuts and fruits of your choice. Just make sure the total amount of nuts and fruits are 3 cup each. If you change the amount of dried fruits, you might feel the need to add sugar.
