When and Where I come from, Mother ‘s day isn’t much heard of. Even though I don’t need a day to love my Mom and I love and respect my parents anyways but am sure glad that there is a day that celebrates Motherhood. God knows Moms need to be appreciated more! So this Mother’s day, my husband and my older one got a bouquet of red roses and a huge card for me. My husband told my son –
Him- It’s a surprise for Mommy. We can’t tell her. When she goes to sleep, we will write “Happy Mother’s Day” on the card and give her in the morning with the flowers. It’s a secret so Shhhhhhhh.
Ingredients
- 2 1/4 cup All purpose Flour
- 1 tsp Baking powder
- 1 tsp Baking soda
- 3/4 tsp Salt
- 2 tsp Lemon juice
- 1/4 cup Oil
- 1 cup Brown Sugar
- 2 large Eggs
- 1 cup mashed ripe Bananas or 2 mashed ripe Bananas
- 1 tbsp. Vanilla extract
- 1 1/4 cup thick Yogurt, whipped ( I used home-made)
- 1 cup semi-sweet Chocolate chips
- 1 cup Walnuts, chopped
- 2 tsp Instant Coffee
- 11 oz. Cream Cheese, softened
- 1/4 cup plus 1 tbsp. Sugar
- 1/4 cup thick Yogurt, whipped
- 2 tsp Vanilla extract
Instructions
- Preheat the oven to 350F and prepare a 10 inch Bundt pan. You can use a normal cake pan with more depth too.
- In a bowl, sieve flour, baking powder, baking soda and salt. Save few tbsp. flour to coat the walnuts and chocolate chips.
- In another bowl, whisk eggs and sugar until creamy. Add oil, yogurt and coffee to it and whisk well.
- Next add bananas and vanilla extract.
- Take the kept aside flour and add walnuts and chocolate chips to it. Coat well. Now add it to the banana mixture. Mix well.
- Fold the dry ingredients with the wet ones.
- In another bowl, whisk cream cheese, sugar and vanilla extract until creamy. Add 1/4 cup yogurt to the cream cheese mixture. Keep aside.
- Add two-third of the bread batter into the Bundt pan. Spread evenly.
- Add a thin layer of cream cheese mixture on top of the bread batter. Spread evenly.
- Now add remaining one-third batter and spread well.
- Bake the bread for 55-60 min. Cool it at room temperature and then unmold it.
- Cover it well and then chill it in fridge for 2-3 hours. Enjoy.
Notes
The cheese filling tastes best after it has set in the refrigerator for some time.
