Misery loves company and so does tea. As much as I love tea, truth is that more than half of the fried snacks in India are had along with tea. If we quit tea for a month, my guess is that each of us will lose at least 3-4 lbs. weight. But then, giving up on the “Elixir of Social Life”, is it really worth it?
These cake rusks are not the unsweetened rusks that are widely popular in India during tea time. These are more like an Indian version of biscotti, albeit simpler and easier. Once you make these super crispy, light and airy cake rusks at home, you will never go back to the store bought ones ever again.
Ingredients
1 cup unsalted Butter, at room temperature
1 cup Sugar
4 large Eggs, at room temperature
1 and 1/2 tbsp pure Vanilla Extract
2 cups All purpose Flour
3 tsp Baking powder
1/4 tsp Salt
6 tbsp full fat Milk

What Can be used for eggs substitute ??

Jinal although people use bananas, condense milk or applesauce as egg substitutes, I don’t like to take a recipe involving eggs and make it eggless. It affects the outcome. Hi Nidhi is there a version of tea rusk too. One which doesn’t require sugar and may be less butter.

Thank you so much Aishwarya :). Normally it’s not a good idea to take a recipe that involves eggs and make it eggless. It disturbs the ratio of wet to dry ingredients as well as the rise and moistness of the cake. It is always better to pick a eggless cake recipe to make a eggless cake. I have quite a few go-to eggless cake recipes that I will post soon.
