India trip is always bittersweet for me. Sweet because of the reasons obvious to everyone. It’s my home land, place where I was born and raised, it’s where my family and loved ones are and cherry on top, it is an amazing culinary adventure for me. But also bitter coz you have to go through the pain of leaving all of that behind, one more time, for a year or years, may be. But this India trip was very special to me. Apart from meeting the people who I meet every time and doing the things I always do, I got to meet my closest friends from college after a gap of 13 long years. I will never forget that feeling. It was not easy for all of us to meet at one place coz all of us are in different states, let alone cities but when the desire to meet is strong enough, all the excuses go away.
We have missed so many important occasions in each others’ life even when we could easily have been there and life was much simpler, over some of the silliest reasons. I missed some of their weddings because I had a JOB in a different state! Talk about misplaced priorities!! Now that I think about it, I do not know what I was thinking that time. This time, when it was really (and I mean really) difficult for us to meet, it was unbelievable what some of them overcame to be there for just a few hours. Sometimes, some people go that extra mile and set the bar high for everyone.
Apart from that, I tried to make sure I ate what ever had been on my to-be-eaten list for a very long time. Oscillating between my decision to eat and risk a very much possible upset stomach or to not to eat and then crave for it for few more years, I decided to dive from the deep end and am glad I survived to cherish it. Of course, I had an upset tummy but what’s any gain without pain, right? Among the safer things that I ate was this Mirchi by Baby. Baby was our house help many moons ago and she still keeps in touch with us long after she has moved on to better things in life. And when she came to know I was visiting Jodhpur, she specially came and made this mirchi for me as it is one of my favorite things to eat.
Baby ki mirchi is one of the best Mirchi preparation I have eaten and I can safely say that with this on my plate, I do not need any curry or side dish. It comes together fairly easily and the magic is in the quantity of ingredients added to it.
Ingredients
- 300 gms Long Green Chilies
- 3/4 cup Oil
- 50 gms Garlic
- 10 gms Turmeric Powder
- 20 gms Dry Mango Powder
- 20 gms Salt
- 20 gms Mustard Powder
- 20 gms Coriander Powder
Instructions
- Crush the garlic with pestle and mix it with turmeric, mango, mustard, coriander powders and salt.
- Slit the green chilies length wise and stuff it with all the spices mix.
- In a wide skillet, add oil and heat it to a very high temperature. Once it reaches that temp, reduce the stove to a simmer and quickly add all the chilies with the slit side up. Make sure none of the chilies are on top of each other.
- Once the chilies are cooked from the bottom, gently turn them upside down with tong and cover the skillet for a minute.
- Turn off the stove and dish it out. Remaining oil and spices in the skillet can be used to make dal or any vegetable.
- Enjoy hot or cold with chapati.

I have everything except mustard and dry mango powder. Dry mango is amchur right?
Also, the green chillies – these are the longer lighter ones available here? The less spicier variety?

Yes, dry Mango is Amchur Shantala. I had made this while I was in India so I used the Indian chilies but if I were to make it here, I would use the longer chilies for this, as you said.
